Oxalis tuberosa

This offering is a bit out of left field because it’s grown more as a vegetable although it does have attractive gray-green, clover-shaped leaves and small yellow flowers. But it’s the brightly coloured, overwintering tubers that are the real focus. These are high yielding, easy to grow and store and when cooked have a pleasant sweet, slightly tangy flavour.  A highly nutritious and welcome alternative to the potato.
